Ingredients
- 1/4 cup extra-virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- 1/3 cup WOODHILL COTTAGE PEACH CONSERVE
- 2 tablespoons champagne vinegar
- 1 tablespoon chopped fresh thyme
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 fresh peaches, pitted and sliced into wedges
- 6 fresh Campari tomatoes, quartered
- 2 (4-oz) balls fresh burrata cheese, quartered
- 1/3 cup fresh cherries, pitted
- 1/4 cup toasted and salted pepitas
- Garnish: Fresh basil leaves

Instructions
To make the dressing, add the olive oil, lemon juice, Peach Conserve, vinegar, thyme, salt and pepper to a small bowl and whisk until smooth. Set aside.
Combine peaches, tomatoes, and cherries in a wide serving bowl. Toss with half of the dressing until well coated. Add the cheese and sprinkle with pepitas and basil leaves. Drizzle additional dressing over the cheese wedges and serve immediately.
