Ingredients
- 1/2 cup WOODHILL COTTAGE TOMATO JAM
- 1 cup light brown sugar
- 2 tablespoons water
- 1 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 2 teaspoons granulated onion
- 1/4 teaspoon kosher salt
- One (12-pound) honey cured spiral sliced bone-in ham
- 1 onion, quartered
- 2 shallots, halved
- 2 small green apples, halved

Instructions
Preheat oven to 275°F. Position rack in bottom third of the oven.
In a large saucepan, add Tomato Jam, brown sugar, water, cinnamon, nutmeg, ginger, cayenne, granulated garlic and salt. Bring to a simmer over medium-high heat until sugar has melted, about 10 minutes.
Place the ham on a wire baking rack over a baking sheet. Brush with the Tomato Jam mixture. Place the onion, shallots and apples around the ham.
Place the pan in the oven and cook for 3 hours, basting the ham every 30 minutes until the cooking is finished.
Remove the ham from the oven and garnish, if desired.
