Peach and Hot Honey Glaze with Pork Tenderloin

Ingredients

GLAZE

  • 3/4 cup WOODHILL COTTAGE PEACH CONSERVE
  • 1/4 cup fresh orange juice
  • 3 tablespoons A.R.’s Hot Southern Honey™
  • 1 teaspoon whole grain mustard
  • 2 sprigs of fresh thyme
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

PORK TENDERLOIN

  • One (1-pound) package pork tenderloin
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon vegetable oil
  • 2 tablespoons butter
  • 4 thyme sprigs
  • kitchen twine (optional)
  • Garnish: thyme sprigs

Instructions

Preheat the oven to 425°F.

In a small pot combine the Peach Conserve, OJ, hot honey, mustard, thyme sprigs, salt, and pepper. Cook over medium heat until the conserve is melted and the glaze starts to bubble. Remove 1/2 cup of glaze to serve with the pork tenderloin.

Season pork tenderloin with salt and pepper and tie with kitchen twine, if desired.

In a cast iron skillet, add the oil and sear the pork for 1 minute on each side until browned.

Add butter and thyme sprigs to the skillet. Baste the pork with the melted butter and brush with the remaining 1/2 cup glaze. Place the skillet in the oven and cook for 10-15 minutes or until the meat is 145°F. Do not overcook.

Remove from the pan and garnish, if desired, with thyme sprigs. Serve with reserved glaze.
