Ingredients
- 1 pound sliced bacon (not thick-cut)
- 5 tbsp. plus 1 tsp. WOODHILL COTTAGE TOMATO JAM
- 2 tbsp. plus 2 tsp. light brown sugar
- 4 tsp. freshly ground black pepper

Instructions
Preheat oven to 375° F with one rack in the top third and another rack in the bottom third of the oven. Line two baking sheets with foil and place an oven-safe wire rack on each. Lay out the bacon strips perpendicular to the lines on the wire rack, divided between the two pans and making sure they don’t overlap.
Sprinkle the bacon slices evenly with brown sugar, about 1/2 teaspoon per slice, and freshly ground black pepper, about 1/4 teaspoon per slice.
Bake the bacon in the oven for 20 minutes. Remove the bacon from the oven and spread Tomato Jam over each slice, about 1 teaspoon per slice. Return pans to oven, rotating them. Bake an additional 20 minutes or until bacon looks golden and cooked through. Let the bacon cool right on the wire rack for 10 minutes. The bacon will crisp up as it cools and as the melted sugar and Tomato Jam slightly hardens.
